Creamy Cauliflower Potato Pea Soup (Aloo Gobi Mattar...sort of)/Granola!

My very favorite Indian dish is Aloo Gobi (spiced potatoes and cauliflower), and it occurred to me that I could make a delicious, creamy (dairy-free) out of the same ingredients as in this comforting dish. And why not add some sweet peas for a bit of texture while I'm at it? Turmeric, cumin, coriander, cayenne, ginger, and more will flavor the soup with warm, super savory spices and a bit of spicy heat. Coconut milk will provide the rich creaminess. Seriously, my stomach is growling just thinking about this soup!

As an extra this week I'm makkng granola, which I would not recommend pairing with your soup, unless, of course, you want to munch on some as a dessert. My granola is full of oats, quinoa, chia seeds, pepitas, dried cranberries, coconut, raisins, dried apples, and pecans. Coconut oil and honey will bind it all together. Oh my! It's going to be available in a limited quantity only, so orders for it will be first come, first served. Order early!
